Here are the add-on recipes necessary to prepare the main dishes of this cookbook. These are either served with meals or are used in cooking to enhance the taste of the food.

MASALA

Masale/spices are an integral part of Indian cooking. These spices have medicinal and therapeutic effects. They help in maintaining the normal functioning of the body. Ingredients

  • Black salt: 200 g
  • Roasted cumin seeds: 50 g
  • Black pepper: 25 g
  • Cloves: 10
  • Rock salt: 100 g
  • Roasted carom seeds: 50 g
  • Asafoetida: 5g
  • Green cardamom: 5

Preparation Method

  1. Dry roast cumin seeds and carom seeds.
  2. If you are using whole black salt and rock salt, then crush black salt and rock salt with the help of a pestle.
  3. Grind cumin, carom seeds, black pepper, cloves, cardamom, and asafoetida together.
  4. Add black salt and rock salt and grind again into fine powder.
  5. Store in an airtight container for up to two months. Do not open the lid frequently to keep the kala namak mix fresh.
  6. Fill the Kala Namak Mix in a small salt sprinkler for daily use.

Garam Masala Cooking Recipe

Makes: 70 g

Ingredients

  • Coriander seeds: 3 tbsp
  • Cumin seeds: 2 tbsp
  • Black pepper: 1 tbsp
  • Fennel: 1 tbsp
  • Dried ginger: 1 inch
  • Cloves: 8
  • Black cardamom: 2
  • Green cardamom: 6
  • Nutmeg: ½ small
  • Mace: Half shreds
  • Bay leaf: 4
  • Cinnamon stick: 2 inches
  • Star anise: 1 in
  • Carom seeds: ½ tsp
  • Caraway seeds: ¼ tsp

Preparation Method

  1. Dry roast all the ingredients on low flame for 5-7 minutes until your kitchen fills with aromatic spices smell.
  2. Turn off the flame. Let the spices cool down.
  3. Finely grind the spices. Store garam masala in an airtight container to keep it fresh for longer.

Uses: Almost in all types of food from curry to gravy, from cutlets to dal fry.

Note: It is not that if any of the ingredients are not available, then you cannot make garam masala. If an ingredient is not available, skip it. This will slightly change the taste but is still be better than store-bought garam masala.

Chole Masala Powder Cooking Recipe

Makes: 110 g
Preparation time: 15 mins
Cooking time: 5 mins

Ingredients

  • Coriander seeds: 4tbsp
  • Black pepper: 2 tbsp
  • Dried ginger: 2 inches
  • Black cardamom: 2
  • Nutmeg: 1 small
  • Bay leaf: 4 medium or 3 large
  • Dried fenugreek leaves: 2 tbsp
  • Turmeric powder: 1 tbsp
  • Cumin seeds: 2tbsp
  • Black salt: 1½ tbsp
  • Cloves: 10
  • Green cardamom: 6
  • Dry red chilies: 6
  • Cinnamon: 2 inches
  • Dried mint leaves: 1 tsp
  • Dry mango powder: 1½ tbsp

Preparation Method

  • Mix turmeric powder, dry mango powder, and black salt. Keep aside.
  • Dry roast the rest of all the ingredients on low flame till spices release an aromatic smell.
  • Grind the roasted spices to a fine powder. Add turmeric powder, dry mango powder, and black salt to it. Mix well. Store in an airtight container.

Uses: Chole masala powder is the main masala used in chole masala and brown chickpeas masala subji.

Ranch Phoran Cooking Recipe

Makes: 70 g
Preparation time: 10 mins
Cooking time: 5 mins

Ingredients

  • Coriander seeds: 4tbsp
  • Fenugreek seeds: 1 tbsp
  • Nigella seeds: 1 tsp
  • Fennel seeds: 2 tbsp
  • Whole dry red chilies: 2
  • Mustard seeds: 1 tsp

Preparation Method

  1. Remove the stem from chilies. If you want to make the chilies less spicy, remove the seeds.
  2. Dry roast all ingredients except mustard seeds till the spices release an aromatic smell.
  3. Cool the spices. Add mustard seeds and grind them finely.
  4. Store Panch Phoran in an airtight container.

Uses: Panch phoran is used in stuffed vegetables such as stuffed bell pepper, stuffed bitter gourd, and stuffed pointed gourd.
