Ingredients

  • 1 shoulder of lamb, on the bone
  • 4 lamb cutlets
  • Extra virgin olive oil
  • 2 cloves garlic
  • 1 sprig of rosemary
  • 1 cup (250 ml) white wine
  • 2 tablespoons tomato paste
  • 1 cup (250 ml) water
  • Slices of dry bread
  • Salt

Cooking Method

  • Cut up the shoulder of lamb into pieces without removing the bones.
  • Trim the cutlets (to be cooked later for adding to the finished dish).
  • Brown the pieces of lamb in the extra virgin olive oil with one clove of garlic and the rosemary.
  • Deglaze with the wine and let evaporate.
  • Add the tomato paste diluted in water, season with salt, and cook for at least 1 hour over low heat.
  • Meanwhile, prepare the crostini by browning the dry bread in the oven at 350°F (180°C) for 10 minutes.
  • Lightly rub them with the second clove of garlic.
  • Brown the cutlets in a skillet.
  • Place some crostini on the base of each plate.
  • Lay some pieces of lamb shoulder on top with a generous spoonful of the sauce and decorate with the cutlets.
