Lamb in Sauce Cooking Recipe, Ingredients, Cooking Method

Ingredients
- 1 shoulder of lamb, on the bone
- 4 lamb cutlets
- Extra virgin olive oil
- 2 cloves garlic
- 1 sprig of rosemary
- 1 cup (250 ml) white wine
- 2 tablespoons tomato paste
- 1 cup (250 ml) water
- Slices of dry bread
- Salt
Cooking Method
- Cut up the shoulder of lamb into pieces without removing the bones.
- Trim the cutlets (to be cooked later for adding to the finished dish).
- Brown the pieces of lamb in the extra virgin olive oil with one clove of garlic and the rosemary.
- Deglaze with the wine and let evaporate.
- Add the tomato paste diluted in water, season with salt, and cook for at least 1 hour over low heat.
- Meanwhile, prepare the crostini by browning the dry bread in the oven at 350°F (180°C) for 10 minutes.
- Lightly rub them with the second clove of garlic.
- Brown the cutlets in a skillet.
- Place some crostini on the base of each plate.
- Lay some pieces of lamb shoulder on top with a generous spoonful of the sauce and decorate with the cutlets.
