Ingredients

  • 2 lb. (1 kg) very fresh sea urchins
  • 14-16 oz. (400-500 g) spaghetti
  • 2 cloves garlic
  • A few sprigs of parsley
  • 1 Thai/bird (bird’s eye) chili (to taste)
  • 2 tablespoons olive oil
  • Salt, pepper

Cooking Method

  • Peel and chop the garlic.
  • Wash the parsley, remove the stalks, and chop.
  • Chop or crumble the chili.
  • Clean and empty the sea urchins, retaining their tongues.
  • Place the tongues in a large bowl.
  • Bring a saucepan of salted water to a boil and cook the spaghetti.
  • Drain, reheat in a skillet for 2 minutes with the garlic and olive oil, and then quickly mix in the bowl with the sea urchins’ tongues.
  • Add the chopped parsley and the chili. Mix again and serve immediately.

If the sauce seems too dry; add a small ladle of the pasta cooking water to dilute it.
