Spaghetti with Sea Urchins Cooking Recipe – Spaghetti Coi Ricci Di Mare Recipe

Ingredients
- 2 lb. (1 kg) very fresh sea urchins
- 14-16 oz. (400-500 g) spaghetti
- 2 cloves garlic
- A few sprigs of parsley
- 1 Thai/bird (bird’s eye) chili (to taste)
- 2 tablespoons olive oil
- Salt, pepper
Cooking Method
- Peel and chop the garlic.
- Wash the parsley, remove the stalks, and chop.
- Chop or crumble the chili.
- Clean and empty the sea urchins, retaining their tongues.
- Place the tongues in a large bowl.
- Bring a saucepan of salted water to a boil and cook the spaghetti.
- Drain, reheat in a skillet for 2 minutes with the garlic and olive oil, and then quickly mix in the bowl with the sea urchins’ tongues.
- Add the chopped parsley and the chili. Mix again and serve immediately.

If the sauce seems too dry; add a small ladle of the pasta cooking water to dilute it.
