Stuffed Vegetables Cooking Recipe | Verdure Ripiene Recipe

Small stuffed vegetables (or flowers) are often included in antipasti throughout Italy. Stuffing and vegetables vary from one region to another and according to the season.

Here is a recipe from Liguria.

Ingredients

  • 2 floury potatoes (e.g. Russet, King Edward, or Maris Piper)
  • 2 zucchini
  • 2 large onions
  • ½ cup (3 oz./80 g) green beans
  • 1 egg yolk
  • 1 clove garlic
  • ⅓ cup {2 oz./60 g) grated Parmesan cheese
  • ¼ cup (60 ml) olive oil
  • ⅛ cup {½ oz./10 g) dried porcini (soaked for 15 minutes in lukewarm water)
  • A few basil leaves
  • 1 teaspoon marjoram
  • 4 zucchini flowers
  • Salt, pepper

Cooking Method

Clean the vegetables.

  • Peel the potatoes and cut them into pieces.
  • Cut one of the zucchini in two lengthwise.
  • Cut the onions in half, then scoop out the insides to make four shells.
  • Remove stalks from the green beans and cut them into pieces.
  • Steam all the cleaned vegetables for approximately 20 minutes.

Prepare the stuffing.

  • Press the green beans, potatoes, and zucchini through a coarse sieve or vegetable mill (1).
  • Add the egg yolk, crushed garlic, grated cheese, 2 tablespoons (30 ml) of the olive oil, the drained porcini, and chopped herbs (2).
  • Season with salt and pepper.

Prepare the vegetable shells.

  • Remove the pistils from the flowers.
  • Cut the second zucchini in two, lengthwise.
  • Scoop out the seeds and cut each half into two.
  • Fill the flowers, the zucchini, and the onion shells with the stuffing (3).

  • Place them on an oiled baking sheet.
  • Bake for 15 minutes at 400°F (200°C).
  • Serve the stuffed vegetables hot or cold.

Olives can be drained and served just as they are, or flavored very simply with the addition of a few ingredients (vegetables in oil, chilies, garlic, citrus zest, herbs, spices, etc.). Here is a recipe from Umbria.

Marinating time: at least 6 hours

Ingredients

  • ⅔ cup (4 oz./120 g) black olives
  • Zest of 1 orange
  • 1 clove garlic
  • 1 bay leaf Salt
  • 1 tablespoon olive oil

Cooking Method

  • Mix the olives with the orange zest (1), the peeled and crushed garlic, and the chopped bay leaf.
  • Season with salt, add the olive oil (2), and mix.
