Pizza Dough Cooking Recipe – Pasta per pizza Napoletana Recipe
For 1 pizza

Ingredients
- 1 ¾ cups (6 oz./170-180 g) all-purpose flour
- 1/3 cup (100 ml) water at 77°F-83°F (25°C-30°C)
- 1 teaspoon (5 g) salt
- 1/5 teaspoon (0.5 g) fresh yeast
- 1 teaspoon (5 ml) olive oil
Cooking Method
- Put the water in a mixing bowl and add the salt.
- Dissolve the yeast in the salted water.
- Taking small amounts at a time, add half the flour in a thin stream, mixing continuously with your fingers. Stir in the olive oil.
- Add the rest of the flour and knead the dough until well mixed and coming away from the sides of the bowl.
- Continue kneading for 10 minutes, until smooth and elastic; it should not stick to your fingers.
- Shape the dough into a ball and leave it, lightly floured, in the bowl covered with a damp cloth and leave it to rise for 30 minutes at room temperature, free from drafts, approximately 65°F-70°F (18°C-22°C).
- If you have prepared a large quantity of dough for several pizzas, divide it with a knife into the number of pizzas to be made.
- Shape into tightly formed balls, cover with a damp dish towel and leave to rest for 8 hours at room temperature, free from drafts, at approximately 65°F-70°F (18°C-22°C).
Chefs note
It is always possible to stop the dough rising by putting it in the refrigerator (2 days maximum, if brushed with oil and placed in a hermetically sealed box), or even in the freezer (well covered in plastic wrap). You will then need to restore the dough to room temperature before completing the rising time. However; this will have an effect on the final quality of your pizza.

- Preparation time: 5 minutes
Ingredients
- ½ cup (3 oz./80 g) good-quality peeled tomatoes (canned or fresh)
- ½ clove garlic
- 1 teaspoon (5 ml) olive oil
- A few basil leaves
- Salt
Cooking Method
- Crush the garlic and very quickly mix all the ingredients together with a stick blender. Season with a pinch of salt.
Mozzarella for Pizza Cooking Recipe – Mozzarella per Pizza Recipe

- Preparation time: 5 minutes
Ingredients
- 5 oz. (150 g) ball or braid of mozzarella
Cooking Method
- Squeeze the water from the mozzarella and chop either in a food processor, or with a knife.
