Ingredients

  • 2 lb. (1 kg) zucchini
  • 2 cloves garlic
  • 1 cup (250 ml) wine vinegar
  • 1 large bunch mint
  • Sufficient quantity of oil for deep frying
  • Salt

Cooking Method

  • Peel the garlic and cut into slices.
  • Heat the frying oil.
  • Wash the zucchini, cut them into rounds about ¼ in. (5 mm) thick, and deep-fry them.
  • Drain and place on paper towel to remove excess oil.
  • Prepare a marinade by boiling the vinegar for 5 minutes with the garlic and some of the mint leaves.
  • Season with salt.
  • Once the mint leaves have cooked, remove them with a slotted spoon and discard.
  • Layer the zucchini and remaining mint leaves alternately in a shallow dish.
  • Pour over the marinade and leave to cool.
