Zucchini with Fresh Mint Cooking Recipe – Zucchine Alla Menta Recipe

Ingredients
- 2 lb. (1 kg) zucchini
- 2 cloves garlic
- 1 cup (250 ml) wine vinegar
- 1 large bunch mint
- Sufficient quantity of oil for deep frying
- Salt
Cooking Method
- Peel the garlic and cut into slices.
- Heat the frying oil.
- Wash the zucchini, cut them into rounds about ¼ in. (5 mm) thick, and deep-fry them.
- Drain and place on paper towel to remove excess oil.
- Prepare a marinade by boiling the vinegar for 5 minutes with the garlic and some of the mint leaves.
- Season with salt.
- Once the mint leaves have cooked, remove them with a slotted spoon and discard.
- Layer the zucchini and remaining mint leaves alternately in a shallow dish.
- Pour over the marinade and leave to cool.
